Detailed doodles replace photos so readers can imagine their own dishes

Bright, enticing photographs and detailed recipes used to be the standard format for cookbooks but things are changing.

Illustrations are replacing glossy photos and ingredients and measurements are personally penned to show the chef's handwriting rather than neat and tidy fonts.

In a tsunami of recipes available on blogs and YouTube, cookbooks are being reinvented to encourage consumers to open their wallets.

They are being transformed from practical manuals to pieces of art.

A perfect example of this transformation is the book “Salt, Fat, Acid, Heat: Measuring the Elements of Good Cooking,” written by Samin Nosrat, which was released in Korean earlier this year.

Written by an American chef and food writer, the book touches upon the four elements of basic cooking.

The author explains how acid strikes a balance in food while fat adds a savory element and texture. With the right balance of salt, acid, fat and heat, Nosrat says anyone can create tasty food without using a recipe.

The hardcover book is thick, a hefty 460 pages, but features no photos. Instead, the encyclopedia-esque collection of recipes uses illustrations to detail every single ingredient, from an onion to a scrap of herb .

Additional information published in handwriting is another fun element of the book that gives readers a fun way to digest the vast amount of information the book has to offer.

The illustrations are the work of Wendy MacNaughton, who also works for The New York Times.

In the preface of the cookbook, Nosrat wrote, “The choice to embellish this book with illustrations rather than photographs was deliberate. Let it liberate you from feeling that there’s only one perfect version of every dish. Let it encourage you to improvise, and judge what good food looks like on your own terms.”

Kim Su-yeon, who works at Semicolon, a publisher of the cookbook, said, “I think the drawings by famous illustrator MacNaughton upped the charm of the book. There’s also this message from the author that you should keep trying hard and use your failures to imagine a dish of your own.”

“Edit Pasta Cookbook,” published last October by Poets and Punks, a local independent press, compiles the pasta recipes of 30 people from all walks of life, from a musician to a chef to a fashion designer. And each recipe is completed with the illustrations of Park Hyung-jin.

Oh Seon-hee, the CEO of Poets and Punks, said, “This is a book offering amateurs’ easy recipes, not the sophisticated cooking methods of professionals, so I wanted the book to be accessible to the readers. I chose illustrations for that reason."

“Everyone uses the same ingredients but their outcomes may vary. I want readers to stretch their imaginations by looking at the illustrations,” she added.

The handy sized book has already made it to a second printing.

“Easy Spain Home Meal Recipes with Illustrations” is a book written by an illustrator.

Park Su-jeong, the author and illustrator, introduces the Spanish comfort food she used to enjoy while she was studying in the country.

Between pages of recipes, Park also offers insights into how to draw simple illustrations such as a patterned dish or a coffee cup and churros.

“This is a recipe book made by an amateur,” said Park.

“Photos are accurate but I wanted readers to see the charm of illustrations.”

“ABC Drip” is a how-to book for those who are new to drip coffee. The book features a character named Melissa and her dog Wondu.

While it does feature photos, the story of Melissa's and her furry companion's journey in search of the best drip coffee is illustrated.

Author Yu Ju-yeon said, “Since this book is for beginners, I wanted it to be easy, fun and simple. I chose illustrations to present my story in a natural and friendly way.”

“The World of Kitchen Tools” is written by food critic Lee Yong-jae. In it, she delves into kitchen tools from a measuring cup to an air fryer with realistic and sophisticated illustrations.

“Granny’s Cookbook” is written by a granddaughter who wants to archive her grandmother’s recipes.

The book was re-released in September last year.

Park Rin, the granddaughter, wrote and illustrated the book based on notes and voice recordings of her grandmother.

“The book is more than introducing recipes. It approaches food from a cultural point of view,” said Kim Mun-ju who works at Wisdom House, the publisher of the book.

Lee Ju-ho, a merchandiser who sources cookbooks at Kyobo Bookstore, said, “With plenty of people who are highly interested in food and a lot of cooking shows both online and offline, cookbooks are being published in a greater variety of ways than before.”
